"Carmel Ahern is the most enthusiastic canteen manager I
have known in schools. Since the canteen became a healthy
canteen in 2005, she is constantly reviewing the menu seasonally
to make interesting healthy combinations of snacks and lunch
items to interest the children. Many items are made on the
premises by Carmel.
Selling only healthy food does not give the scope for making
good profits and this year we will for the first time make
a small profit due to Carmel having one off specials every
Tuesday eg. Sushi, healthy fried rice, homemade soup and a
roll. She has also devised theme menus on particular days
which the children really look forward to. On these days,
the canteen makes a good profit without selling 'junk food'.
Pies and hot dogs (low fat variety) are not part of the everyday
food items sold and are only part of some of the special menus.
I would like to recognise Carmel for her continuous commitment
to providing a healthy menu for the children at St Mark's."
